Super Delicious Jell-O Salad
Jell-O Salad
2 boxes tapioca pudding
1 box cherry Jell-O
3 cups water
Bring all ingredients to a boil. Transfer to a big bowl and put it in your refrigerator to cool. It will take a couple of hours to set.
1 carton cool whip
raspberries to taste, frozen or fresh (if frozen, thaw and drain)
When Jell-O has set, fold in the cool whip and add raspberries. And that's it folks. Yummy!!!
We have also tried substituting orange Jell-O and mandarin oranges and it is good too, but the cherry and raspberry combination is my favorite.
***Note: I know that tapioca pudding is never on sale, so take your HyVee ad to Walmart and have them price match it. Trust me, it's worth it!

- Kraft Foods coupons They have lots of $1 off coupons! Just an example, they have $1 off any Kraft salad dressing and if you go to Walmart and use this coupon, the dressing will be .58!
- Coupon Mom coupons. These might be a lot of the same coupons as the Kraft coupons, but I think there are a few in there that are different.

Loaded Baked Potato Soup
Baked Potato Soup:
4 largeish baking potatoes
2/3 cup butter
2/3 cup flour
3/4 tsp salt
1/4 tsp white pepper
6 cups milk
1 cup sour cream
1/4 cup sliced green onions
Bacon, cooked and crumbled
Shredded cheese
-Bake potatoes or cook them in a microwave. Peel and cube potatoes into desired size (I like my potato chunks to be on the small side).
-In a large saucepan melt butter then stir in flour. Add salt and pepper and stir until smooth. Gradually add milk and bring to a boil.
-Cook and stir until thickened. Turn down heat and add sour cream. Stir until smooth. Add potatoes and green onions and heat through. Be sure to not heat too quickly or the sour cream will curdle.
-Top with more onions if desired, bacon and cheese.

Blackberry Muffins
Blackberry Muffins
Makes about 18-muffins
2 cups AP Flour
1 Tbsp baking powder
1/2 tsp salt
2 eggs
1 cup sour cream
1 tsp milk
2/3 c sugar
8 Tbsp (1 stick) melted butter
1 tsp vanilla
11 0z fresh blackberries, cut in half
-Preheat oven to 400 degrees. Grease your muffin tins or line with paper cups.
-Whisk together the flour, baking powder and salt into a large bowl
-In a separate bowl, whisk together eggs, sour cream, milk, sugar, butter and vanilla
-Add the we mixture to the dry mixture and mix together with a few light strokes, just until the dry ingredients are moistened. Add the berries. Do not overmix! Overmixing will cause the muffins to be dense, not fluffy. The batter should not be smooth.
-Spoon batter into muffin tins. Bake about 17-20 minutes or until a toothpick comes out clean. Let cool for 2-3 minutes before removing from the pan.

Swine Flu
For the past year I have been so focused on getting my year supply of food and other commodities that I think I have missed the mark just a tad. I came to the conclusion that what I should be focusing on first is getting a fully stocked three month supply and then move on to the bigger picture. I think of the people in Mexico who are being encouraged to stay indoors, whose churches and schools are closing, and wonder if any of them have a three month supply of anything.
So, my new goal...a three month supply. I sat down with my husband and we wrote down all the meals that we eat on a daily basis. What would we want to have stocked in our cupboards and freezer to make sure that, if we do reach a pandemic and are stuck in our house, we will be able to live as close to normal as possible. We divided our list into breakfast, lunch and dinner categories and then wrote a list of things we are missing that we need to purchase. It is not going to happen over night, but thanks to already starting our food storage, we are close (relatively speaking that is).
Also, I've said this before, but make sure you have a three month supply of things other than food...like toilet paper, diapers, cleaning supplies, laundry detergent, garbage bags, medicines, etc...
Apart from food and these other necessities, I have been looking at yard sales for entertainment items for my family. I have purchased quite a few board games for all ages, books, puzzles, coloring books, play doh, etc... Anything to make being "stuck" with my family a more pleasant experience.
If any of you have things you are doing to get prepared, I would love to hear about them! I am always looking for fresh ideas to get my family ready. :)

Using Food Storage Apples
Apple Brown Betty
Pour 2 c boiling water over 4 cups dried apples. Let stand at least 5 minutes.
Topping: Mix the following ingredients well:
1/2 c flour

Place the apples and liquid remaining in a greased 9 x 9 pan. Sprinkle the topping over the apples. Bake at 350 degrees for 55 minutes.
I doubled the recipe for the topping mix as I really really like the crunchy stuff. You could also add some chopped nuts to the topping mix if you like.

It's Bread Making Time
Dinner Rolls
1 1/4 cup warm water
2 1/4 tsp yeast
3 eggs, beaten
1/2 cup oil
5 cups flour
1/2 cup sugar
1/2 tsp salt
Put these ingredients into your bread machine in the order listed above. When the dough is finished, turn onto a lightly floured surface and form into rolls. (for a tutorial on how to do this, click here.) Put into a 9x13 greased dish, cover and let rise about an hour. Bake at 400 for 10-12 minutes. Makes about 2 doz rolls.
Italian Bread Using a Bread Machine
2 cups unbleached all-purpose flour
2 cups bread flour
1 tablespoon light brown sugar
1 1/3 cups warm water (110 degrees F/45 degrees C)
1 1/2 teaspoons salt
1 1/2 teaspoons olive oil
1 (.25 ounce) package active dry yeast
1 egg
1 tablespoon water
2 tablespoons cornmeal
Place flour, brown sugar, warm water, salt, olive oil and yeast in the pan of the bread machine in the order recommended by the manufacturer. Select dough cycle; press Start.
Deflate the dough and turn it out onto a lightly floured surface. Form dough into two loaves. Place the loaves seam side down on a cookie sheet generously sprinkled with cornmeal. Cover the loaves with a damp cloth and let rise, until doubled in volume about 40 minutes. Meanwhile, preheat oven to 375 degrees F (190 degrees C).
In a small bowl, beat together egg and 1 tablespoon water. Brush the risen loaves with egg mixture. Make a single long, quick cut down the center of the loaves with a sharp knife, or make 3 diagonal lines down the loaf (like you see at restaurants).
Bake in preheated oven for 30 to 35 minutes, or until loaves sound hollow when tapped on the bottom.

A Money and Sanity Saver!
Of course, being a girl, I am slightly fickle. (Hey, changing my mind is totally within my rights as a wife, mother, and woman!) So, I always have two or three backup meal ideas in place just in case I do not want what I have planned for that night.
Then I write out my grocery list and head off to the store. Before I started menu planning, I would go to the store all the time...consequently spending a ton of money. I would think of a meal, and find that I was missing one or two key ingredients. So, I would make a grocery store run for those 2 things and come home with 10. Not terribly cost effective.
Another blessed side effect from menu planning, is that my life has become so much easier. How many of you get a little stressed when dinner time rolls around? I think my mantra for a long time was...and still on occasion is..."What the heck am I going to make for dinner?!?!?" After a long day of chasing around a 2-year old and a 4-year old, the LAST thing I want to think about is what to cook. When I have it written down already, it saves me a lot of headache.

Tornado Season Approaches
Prepare an emergency box (preferably waterproof) to put in your basement...or wherever you go when the tornado siren sounds. Here are the items I keep in my box:
*Toilet Paper
*Diapers and wipes
*Warm clothes and underwear kept in a big ziplock baggie
*Towel...kept in the baggie with the clothes
*Shoes for each of us (imagine waking up in the middle of the night to a tornado siren and you are in your "jammies" with no shoes on...you're going to want clothes and shoes!)
*Blankets
*An old pair of glasses, a pair of contacts, contact case, contact solution
*First Aid kit
*Crank radio/flashlight
*Batteries
*Bottle for the baby
*Toiletries
*UNO card game
This is NOT my 72-hour kit, although I keep a lot of these same things in those as well. I put everything I can into ziplock baggies in case water gets into my tub. I want all my niceties to stay nice and dry.

My grand total was $14.28!!! A savings of $67.83 or 85% off. I love it. Now, I did spend $2 on coupons...but I think the investment was worth it.
