Blackberry Muffins

Okay, so I think I am going to start posting recipes that correspond with deals that might be going on each week. This week I am so excited to share one of my favorite recipes: Blackberry Muffins. These muffins are so great because they just a little bit tart and not too sweet. They are so delish with a nice helping of butter smeared on top. I love them. In fact, I've just eaten 3 while typing this post. :)

Blackberry Muffins

Makes about 18-muffins

2 cups AP Flour
1 Tbsp baking powder
1/2 tsp salt
2 eggs
1 cup sour cream
1 tsp milk
2/3 c sugar
8 Tbsp (1 stick) melted butter
1 tsp vanilla
11 0z fresh blackberries, cut in half

-Preheat oven to 400 degrees. Grease your muffin tins or line with paper cups.
-Whisk together the flour, baking powder and salt into a large bowl
-In a separate bowl, whisk together eggs, sour cream, milk, sugar, butter and vanilla
-Add the we mixture to the dry mixture and mix together with a few light strokes, just until the dry ingredients are moistened. Add the berries. Do not overmix! Overmixing will cause the muffins to be dense, not fluffy. The batter should not be smooth.
-Spoon batter into muffin tins. Bake about 17-20 minutes or until a toothpick comes out clean. Let cool for 2-3 minutes before removing from the pan.

OOOOoooohhhh! I've never had blackberry muffins-they sound divine!!!
